Zucchini and Cod fish
After a long day of cleaning the house I was exhausted but leaving here in America is different from the country I came from Philippines. In the Philippines you can hire an "angel" to help you with the household chores and here in America you do not have that luxury. So after cleaning and my back aching I drove to the local greenhouse and buy more herbs then to the grocery store. I saw zucchini and thought of cooking it. So here goes our diiner yesterday.
Hubby's plate
My plate it is pretty obvious I am Asian I have to have rice lol!!!
This is pretty easy dish. I fry the cod fish. The zucchini's I saute it with garlic and onions. Then I put the sliced zucchini and when it was tender I put the diced tomatoes. Done!!

Pineapple Cheese Casserole
Last night we had a Women's Advent Tea event at the church. I hosted one table and decorate it. A bunch of my relatives here came and it was a great night. I brought with me two dishes Pineapple cheese Casserole and Mini Apple Pie.
I gather all the ingredients
2 sticks butter
2 cans chunk pineapple
2 cups shredded cheddar cheese
1 cup each sugar and flour, mix
crushed Ritz crackers
Procedure:
* Layer pineapple chunk at the bottom of the dish.
* Top with 1 cup cheese
* Spread 1/2 of sugar and flour
* Spread 1 stick melted butter
The repeat the procedure of layering. Top with crushed Ritz crackers. Bake @ 350F until brown around one hour.
This is one of the hit dish in the event. More than five people asked for the recipe and I gave it to them sharing is the best thing to do in this life.

Apple Mint Ale
This year I went crazy with herbs. One herb that I planted this year is apple mint. I look for some recipe and found this Apple Mint Ale..it's for beverages and this morning I made this for my honey!
After I tasted my concoctions and hubby said "he loves it". I am pretty sure I would make a lot of this every day plus the fact that my apple mint plant is thriving too. Here is the recipe:
1/2 quart Ginger Ale
1/2 cup water
2 lemons
1/4 cup sugar
9 sprigs of fresh Apple Mint
Preparation:
1.) In a glass saucepan ( I use glass), bring the water to a boil and dissolve the sugar over medium-high heat.
2) Once dissolved, remove from heat and add 9 sprigs of apple mint. Place in the refrigerator to chill.
3) Juice the lemons and add the lemon juice to the dissolved sugar mix. Strain all plant debris and lemon seeds.
4) Over crushed ice, fill a glass of 1/2 with the apple mint and top with ginger ale. Garnish with a sprig of apple mint and serve!

Odd
I browse my photo folder and I found plenty of odd shots. I also wonder why it is easy to photograph three things in one shot. Does it goes with balance or three is perfect. What you think?

Salmon with sriracha mayo
My husband's son in law gave us fillet salmon from his fishing trip last week. Hubby and I are not fun of salmon (but love the salmon belly) so I look at online what I can come up with it. I found one recipe that is workable to me the ingredients is not hard to find and most of the ingredients I already have in my pantry. So I decided to cook it.
Ingredients:
Salmon fillet
soy sauce
water
toasted sesame oil
ginger paste ( I don't have fresh ginger but I have ginger paste which has the same freshness of a fresh ginger)
minced garlic
white sugar
rice wine
mayonnaise
sriracha hot sauce
Procedure:
1. Whisk together the soy sauce, water, sesame oil, minced garlic, white sugar, ginger.
2. Place the salmon fillet inside ziploc bag. Pour the marinade sauce on top of the fillet. Remove air as much as possible seal it and refrigerate for at least an hour.
3. In a wok or pan heat the oil in medium/high heat. When it is hot, add the salmon fillet. Do not burn the fish. When it is flaky it is cooked.
4. In a small bowl, mix together the sriracha sauce and the mayonnaise. If you want it to be chilly go for more sriracha sauce.
5. When the fish is done put it on top of vegetable or rice and put the sriracha mayo on top of the fish. Done!

Scrambled egg with spinach
We all like to be healthy and with that we tried to eat healthy. I find spinach with my scrambled egg is pretty good. Now I do not cook scrambled egg with out spinach.

Fried Tilapia with Crab Paste
The one dish that is easy to make is frying. The other day I was craving for fried tilapia and luckily I stock tilapia in the freezer. So I grab one big tilapia thawed it and when it is thawed I cut it in half clean it and seasoned with just salt and black pepper. After frying I cut one tomato and then for the very first time I put crab paste on top of the tomato. Crab paste is not as smelly as the shrimp paste.
