Pickled Vegetable

The other day I was craving for something sweet and sour thing. So I wonder if I can do some pickling of my own. Here is what I've got a pickled vegetable consists of carrots, cucumber and daikon (long white radish). I do not like too much recipe and too long to make so I looked at the internet and found this recipe which I modified it according to my taste.



 



In this recipe I use:
2 carrots, julienned
1 daikon (white radish), julienned
2 cucumber, julienned
1 cup unseasoned rice vinegar
2 tsps kosher or sea salt ( I don't remember if I put salt in my pickle but that is in original recipe. You can put it or not it is all up to you. But I tried not to put salt still it taste good)
1 cup sugar
1 cup water

Pat dry the vegetables especially the daikon and the cucumber so they don't dilute the pickling liquid with excess water. Combine the vinegar, salt, sugar and water together until the sugar dissolves. Place the vegetables in a jar. (it is hard to fit them all in a jar I have the small mouth mason jar so get the wide mouth mason jar so you could fit them all tight). Sealed the jar and store.
Since I only have one cup of vinegar and one cup of water it was not enough for two jars. So I put the liquid half and half each jar and for several hours I turn the jar upside down so the pickling liquid will be distributed to the vegetables. It did not take an hour for hubby to try it. His verdict it is awesome he says he could sit down and eat a jar of it with  no problem. That is how yummy it is!
